Barefoot Bloggers- Gazpacho


I joined Barefoot Bloggers with hopes that I would get out of the "same-old-same-old" routine that I've found myself in when it comes to meals. This week's Barefoot Bloggers recipe of Gazpacho certainly helped in that regard! Strange but true, I've never actually made Gazpacho. If I had known it were this easy to make a healthy and delicious soup (not to mention beautiful-looking!) , I would have done so much sooner!! Now, my hubs is not a "tomato soup" kind of guy, and my 3 year old is pretty picky about what he eats. My one year old, well, he's even pickier. I don't think this is the kind of meal you feed a baby who's just weaning off of baby food anyway!
Given all this, I decided to cut the recipe in half because I knew I would most likely be the only one eating it. I was pleasantly surprised to see Greg try it and say that he likes it!! I made it the night before I served it, and let me say it was flavor-filled and really delicious!!! I brought it in to work for lunch the next day. It made a fabulous alternative to my usual mixed greens salad. I felt like I was doing something really good for myself by making something so jam-packed with veggies and anti-oxidants. I consider myself a pretty healthy eater and this fits right in with the kinds of foods I enjoy on a regular basis.
I didn't make many changes to the recipe at all. I am not a huge fan of using a ton of garlic in my dishes (thus the Chicken w/40 Cloves of Garlic will most likely be a "pass" week for me :)...so I used even less than called for. I was out of white vinegar (must have used the last of it at Easter to color the eggs!) so I substituted Apple Cider vinegar. I don't think you can really tell what kind of vinegar is in there, as long as it's not something really distinct and strong like Balsamic. Also, I decided to partially peel the cucumber, even though it said not to.
All in all, I was pleasantly surprised by how easy and delicious this recipe was!!

Gazpacho from The Barefoot Contessa Cookbook, 1999


Ingredients:
1 hothouse cucumber, halved and seeded, but not peeled
2 red bell peppers, cored and seeded
4 plum tomatoes
1 red onion
3 garlic cloves, minced
3 cups tomato juice
1/4 cup white wine vinegar
1/4 cup good olive oil
1/2 tsp kosher salt
1 tsp freshly ground black pepper


Directions:
Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into the food processor fitted with a steel blade and pulse until coarsley chopped. Do not overprocess!!
After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper.
Mix well and chill before serving. The longer the gazpacho sits, the more the flavors develop.
Serves 4-6

Barefoot Blogger's : Cranberry Orange Scones


Ok, so this is my first official post as a food blogger. Hopefully I won't make any major faux pas here. I dont know if there are any hard and fast rules like do I have to post the recipe? Do I have to post the name of the person who chose, with a link to their respective blog?

Anyway, Em of the Repressed Pastry Chef http://the%20repressedpastrychef.com/ this month's Barefoot Challenge Recipe of Cranberry Orange Scones.

I have always wanted to try this recipe. I've seen Ina Garten make these on her show, and they always look so good!! To be honest, they were pretty good, but I like my neighbor's cream scones better. These were a bit too tart for us. Overall, though, I think I would make them again. I didn't have time to make the glaze and maybe that would have helped with the tartness.
This recipe says the yield is 14-16 scones, but I was able to get about 22 so I froze some for when we have visitors!

Barefoot Bloggers, Here I Come!

Excellent! Just heard back from Tara, and she has confirmed my participation in the Barefoot Bloggers food blog!
Very excited about this! Barefoot Bloggers is dedicated to making 2 of Ina Garten's (Barefoot Contessa) recipes each month. Posting of the recipe and results go live on 2 Thursday's of each month. All bloggers in this community make the same recipe, and we all post the results on the same day. There is also a "bonus recipe" that I believe is optional.
I am so looking forward to this. I just know it will help me to get out of this cooking rut that I have found myself in!

Since I missed the Curried CousCous, I think I am starting with the Gazpacho for June 25 posting, and will definitely do the bonus recipe of Cranberry Orange Scones (I love scones, this is perfect!).

Anyways, here we go!!!

Welcome to my foodie blog

I've been thinking about doing this for quite some time now. I am starting this food blog so that I can join other food blogging communities and hopefully be inspired to cook some great meals for my family. You should see the top shelf of my pantry closet. It's lined from end to end with cookbooks and only cookbooks. Take a wild guess how often I actually open them and make something out of them. Well, not very often. Pathetic! And yet, the strange dichotomy of it all is that I really, really want to cook new and different things every week. You'd think with all of those fabulous cookbooks that it wouldn't be a problem finding new and innovative recipes. Even more, you'd think with all of the hours logged on my DVR of Barefoot Contessa and Giada's Everyday Italian episodes that I'd have a few good ideas every now and then. But I guess being a very busy working Mom takes it's toll on creativity.
I'm calling my blog "Slice of Life" not just for the obvious reasons, but also because my family blog is named "My Digital Life" and I thought they worked well together.
So, here's to getting out of a cooking rut and trying something new!
